I'm partial to dry aged myself, although it is a real hassle for restaurants to handle. They have to estimate what they are going to sell a month before they sell it to start the process. Some people don't care for dry aging because of the faint twang you get when you taste it. Some don't really know what they are eating. We were in Vegas at the Paris hotel where Gordon Ramsey has a steak house that advertises dry aged beef. When we got our food and I tasted it, I knew right away that is was not dry aged. I told the waitress and she assured me it was dry aged. So I told her to tell the chef to come out to our table and tell me that it was dry aged in person. 5 minutes later the chef brought me a bottle of wine to the table and he told me that they had over sold their dry aged product. They had just opened and had under estimated the response to their opening. So what we received had only been drying for about a week. I was probably the only person in the building who even knew besides the kitchen. The beef was still prime and very good, just not what they were advertising. I'm sure that is a fairly common practice because once it hits the age and the moisture has been removed, it is decomposed to the point that it has to be used quickly or they lose it - so they err on the side of profit. Can't really blame them for that, especially when most people can't tell anyway.

Chef Dennis is pretty straight forward....We once ordered our Rib Eyes and the server came back and told us that there was only one left...I graciously said that my wife would take it...I ordered a filet (not my favorite cut)...

I have often thought it would be fun to attend a football game with members of this board. I know it would be an experience.

The next thing is, I want to go to dinner with Spence when he calls the chef to the table.

Well, the real lesson learned is, let your wife have the best. They deserve it.

I have asked for the chef to come out...as well as the manager.

When a menu advertises a grouper filet (and charges a grouper price), I take umbrance at being swindled by a Swai filet...or, once, even a Tilapia.

When the chef had the nerve to tell me he was serving "Chinese grouper"...I say..."you do know tht Swai is a freshwater fish and more related to a catfish"...

I have seen more and more misrepresentation on menus re seafood...Snapper, and Grouper especially.

It was so bad in Florida that a law was passed making it illegal to misrepresent or have undisclosed substitution of food...

Species of seafood cannot be substituted for one another, and must be accurately and truthfully promoted.

Seafood is the worst to misrepresent. There are so few guidelines that misrepresenting species is fairly common. There is a place close to me selling Pollock and calling it walleye. They sell it for
$12.95 all you can eat walleye dinner. Walleye retails for 12-15 dollars a pound, not really a buffet fish. The only commonality between Pollock and Walleye is that they are both fish.

I've never seen anyone try to pass Swai for Grouper, but It doesn't surprise me. Swai has become a general name for several species of fish. They can't sell Pangasius in Louisiana so they call it Swai and it is legal again. And yes they call it Vietnamese catfish, I guess because it is a bottom feeder. Snapper is such a dense fish, I don't know how anyone would try to pass Swai for it, but I believe they would.

I like Snapper, grouper, drum, scamp.......scamp is fairly rare commercially but is the best of the grouper clan, IMHO.

Up here in NC, they try stuff that I never saw in Florida...the swai switcheroo for grouper....and..I actually once got a 1/4 thin slice of something at the country club up here, they called it a grouper filet...My wife commented that it was the size of a big gold fish and wouldn't be harvested under the state or federal slot limits. It was not grouper

Oh yeah...stamped out of ray....use a big die and call them diver scallops.

My wife and I snorkle for scallops during season on the gulf coast....they are in the grass beds. Fresh...seared with butter...along with oysters pryed off of the bar and a bourbon and water...

Off Topic...but I was down on the coast last week...our friends gulf front house was badly damaged and we were assisting them with quotes, workers, etc. Three nights in a hotel in Apalachicola and commuting in for the day.

We went to a restaurant, one of the few operating, in Port St. Joe and had a nice lunch...the place was packed.

I went to pay the bill for our table and the server said "It's taken care of...those two at that table over there are paying the whole restaurant's bill." I walked over to thank them and found out that they were fron Verizon and they went to a restaurant in the damaged areas every day and picked up the tab.

Very nice gesture, Verizon...

That it is nice. Especially that if you hadn't been there it would have not been known. Doing that kind of gesture without fanfare is admirable.
